Scott River Lodge Granola

For those of you that have stayed with us, you know that there’s nothing better than being greeted with a tray of goodies and freshly baked granola. Treat your guests to a delectable batch of our favorite granola with this easy-to-follow recipe:

First off, set oven at 300 degrees

Shopping List

What you’ll need:

1/2 cup good quality honey preferably orange blossom

1/2 cup pure maple syrup

1/2 cup canola or neutral oil

12 oz of old fashioned oats (not instant) by weight

1 cup sliced raw almonds

1 cup raw pepitas

1 cup raw walnut halves or large pieces

1 cup sweetened coconut

2 tsp cinnamon

1/3 cup very tightly packed brown sugar

1 cup dried blueberries and 1 cup dried tart cherries

Method

To start, go ahead and mix all your dry ingredients in a bowl together. Then, in a separate bowl or pan, heat up the honey, maple syrup, and oil slowly over low heat just until it’s warm — this will make it easier to pour over the granola! 

Next, whisk all your liquid ingredients together, and pour them evenly over your granola. Now Stir it all up!

After you’ve mixed it all up, spread your granola evenly over lined sheet pans in a single layer. Bake for 12 minutes, and then stir up your granola. Repeat this every 4 to 5 minutes until golden brown. 

Once your granola is finished cooking, pour 1 cup each of dried blueberries and tart cherries over it and stir it all up again. 

Allow your granola to come to room temperature before covering, then serve to your guests! 

*Will hold in airtight room temperature container for up to 2 weeks.
